what are kotlety (singular: kotleta)? an eastern european meat patty dish. is this recipe authenic in any way? absolutely not! while i am in fact eastern european and grew up with the authentic (pan-fried, glazeless) version, these have been modified by me to my personal taste. i never enjoyed the texture of pan-fried kotlety, so these resemble meatloaf ingredientwise more than anything.
authentic kotlety are technically often eaten with ketchup, however my version has flavorful glaze instead. please do not eat these with ketchup, it makes me upset. although it's not like i would know if you did, so eat them however you like?
1. preheat oven to 400°f
2. in a large mixing bowl, mix together ground pork and ground beef
3. season with sea salt, pepper, onion powder, garlic powder, and (optionally) paprika
4. lightly mix (overmixing may ruin the texture!)
5. in a separate bowl, drench 2-3 slices of potato bread in milk
6. break up bread into small, soft pieces
7. add the bread pieces into the meat mixing bowl
8. lightly mix until the meat and bread mixtures are combined together
9. in a small bowl, thoroughly mix together ketchup, soy sauce, brown sugar, and garlic powder
10. evenly divide the meat mixture into 12 pieces and place on a baking tray (if nonstick, do NOT grease in any way!)
11. carefully shape each piece with your hands
tip - i occasionally make stuffed kotlety by cutting up mozzarella sticks into small pieces, and then placing those pieces into the middle of the kotlety while shaping them. just make sure to enclose the pieces fully to prevent leaks as they melt!
12. apply glaze to each piece using a basting brush (or spoon)
13. bake for approximately 18-20 minutes or until cooked
14. once cooked through, sprinkle shredded cheese of your choosing on top of each piece
15. return to oven and bake until cheese is fully melted (~2-3 minutes)
16. cool down just slightly and serve!
